Sometimes One Conversation Resets Me

A week ago, I had the CEO of one of the largest food companies in the country over. When we entered our meeting room, he saw the cabinet with tens upon tens of products we've developed over the years and raised an eyebrow: "Why don't you tell the world about this? You're really holding up the entire food industry."

The simple truth? Most of the time, we're busy doing more than talking. Because discretion for clients comes before our ego. Because we prefer that the products speak for themselves on the shelf- not the posts. And because our work culture is one of quiet action, we build processes, solve problems, develop products, touch taste - and only at the end, if there's time left, we also write about it.

But at the end of the meeting, I promised him that from now on, once a month, we'll raise our heads from the intense work - and share here five projects that made our month. And here they are, fresh from the oven.

A line of comforting and delicious cookies, developed for one of the companies I'm proud to accompany for over 5 years - an impressive family company that is managed phenomenally by the brothers of the Malach family.

With Arie, the lab manager, we went on a year and a half journey. We chose "Control" which is cheese made from animal milk, cleaned up off-flavors, built textures, preserved aroma profiles.

atom+ Protein Bar That Doesn't Feel Like a "Protein Bar"

Multi-year project: 60 gram bar, 20 grams of protein and 10grams of BCAA.

The vision: A culinary experience alongside nutritional performance. The complex technology was combining protein in a compound chocolate coating without compromising on taste and texture. Endless iterations, and finally - a bar that you eat because it's tasty, not just because it's "protein."

What excites me is not just the experiment that succeeds in the lab, but the moment when you go to the supermarket in the country or in the world and see the result on the shelf. You remember the first brief, the tastings, the frustrations... and then a small smile arrives: it happened.
